A perfect holiday treat made with our farm's wildflower honey! Some call it honeycomb candy, some call it sponge candy, we call it delicious! 😋
- 2 1/2 teaspoon baking soda
- 1 cup white sugar
- 4 tablespoons golden corn syrup
- 3 tablespoons Uncle Pat's honey
- 4 tablespoons water
- Flaky sea salt, for topping
Instructions:
Whisk sugar, corn syrup, honey, and water together in a saucepan with a candy thermometer attached. Heat over medium heat until mixture is clear and thermometer registers 300 degrees F. Remove from heat. Whisk in baking soda until incorporated. Transfer mixture by pouring into a parchment lined 9x9 baking dish.Â
Do not spread or compress mixture at all, or the bubbles will deflate. Sprinkle with flaky sea salt. Let cool completely, at least 30 minutes. Remove candy from the pan by lifting out the parchment paper. Break or cut into smaller pieces and enjoy!
